Cook on a lower temperature – With the aluminum core, the cookware heats quickly and evenly. Medium to medium high heat will provide the best results
Always preheat – Stainless steel reacts differently than nonstick cookware. Stainless steel is naturally pourous, especially when cold. Preheating will contract the pours, creating a surface will help have less food stick. The best way to judge when you pan is ready, drop a few drops of water in the pan. They should stay in a ball and roll around. If they immediately evaporate then the pan is too hot to use.
Oil after preheating – Once your pan is at the right temperature, add a tablespoon of your preferred oil and swirl it around in the pan. The oil will heat really quick and be ready for cooking almost immediately.
